Canada is apparently the world's largest producer of ice wine. Ice wine grapes are left on the vines until they freeze below -8ºC. The process is risky, because there are many years when the grapes rot, for the cold does not come soon enough. Ice wine is around three times more expensive than other wines. It has an incredible amount of sugar. It's several times sweeter than the sweetest Port.
